Lately 9.13.15-9.19.15- Game Day Nachos

Happy Football Sunday everyone! Here is a recipe for you to enjoy while watching the game!

Game Day Nachos:
Blue corn tortilla chips
Mexican shredded cheese
15 oz can of black beans
Diced red onion
Diced grape tomatoes
Shredded iceberg or romain lettuce
Diced black olives
Sour cream
Homemade or store bought guacomole

Preheat oven to 350 degrees. While the oven is preheating, you can start prepping the nachos. Start by washing your 15 oz can of black beans. Let those air dry while you dice the red onion, grape tomatoes and black olives. If your lettuce isn’t already shredded, shred the lettuce.

I used homemade guacamole, so after I diced the red onion, black olives and grape tomatoes I made the guacamole. To make the guacamole I blended together avocado, olive oil, garlic, and salt.

Once the toppings and guacamole are prepped start placing the blue corn tortilla chips on a 15 x 10 glass dish. Make sure all chips are spread out and not touching.

After all the chips are placed on the dish, top each chip with black beans. Then continue adding as much onion and tomato on the chips as you want. Follow each chip with cheese.

Once the oven is preheated, bake the nachos in the oven until the cheese is fully melted. This will be for about 15 to 20 minutes.

Once the cheese is fully melted you can top the nachos with the following ingredients. Sour cream, guacamole, salsa and shredded lettuce.

Serve and enjoy!
