Thai Chicken Fettuccine: One of my favorites! 🙂 

This recipe excludes the spinach in the picture. 

1 cup of salsa. 
1/4 cup of creamy peanut butter.
2 tablespoons of orange juice.
2 tablespoons of honey.
1 teaspoon of soy sauce.
8 ounces of uncooked fettuccine.
3/4 pund of boneless chicken breasts (cut in stripes.)
1 tablespoon vegetable oil.
1 medium sweet red pepper, julienned (jar.)
1/4 cup minced fresh cilantro.

For sauce, in a microwave-safe bowl, combine first 5 ingredients. Cover and microwave on high for 1 minute, stir. Set aside.

Cook the fettuccine according in the package directions. Meanwhile, in large skillet, cook the chicken strips in oil over medium heat. For 3-5 minutes or until crisp-tender.

Drain fettuccine; top with chicken mixture and sauce. Sprinkle with cilantro. 🙂
